Lunchbox Three Vegetable Scrolls

Lunchbox Three Vegetable Scrolls Recipe by Kylie from Kidgredients.

Prep time: 5 minutes

Cooking time: 20 minutes

Serving size: 32 scrolls

Ingredients

  • 2 carrots, grated
  • 1 zucchini, grated
  • 1 cup frozen corn
  • 4 sheets of puff pastry, defrosted
  • 4 tbsp pizza sauce or tomato paste
  • 1 ½ cups of grated cheddar cheese

Directions

  1. Preheat the oven to 395°F. 
  2. Spread the pizza sauce on each sheet of pastry.
  3. Cover each pastry sheet with carrot, zucchini, and corn kernels.
  4. Divide the cheese among the four sheets of pasty. 
  5. Roll up to a log shape and cut each log into 8 scrolls.
  6. Place the scrolls on a lined baking tray and cook for 15-20 minutes.
