Banana Nut Frosting Recipe

Banana Nut Frosting

This Banana Nut Frosting recipe was originally published in the WPTF “Ask Your Neighbor” Cookbook.

Serving size: Frosting for 2-3 layer cake

Ingredients

  • 1/3 cup butter or margarine
  • 1/2 cup mashed bananas
  • 1 tsp lemon juice
  • 2/3 cup finely chopped nuts
  • 2 lbs powdered sugar, sifted
  • 1 cup toasted coconut
  • A few drops of yellow food coloring (optional)
Banana Nut Frosting

Directions

  1. In a large mixing bowl, cream the butter or margarine until smooth.
  2. In a separate bowl, combine the mashed bananas with the lemon juice to prevent browning.
  3. Gradually add the powdered sugar to the creamed butter, mixing well.
  4. Blend in the banana mixture until fully incorporated.
  5. Stir in the finely chopped nuts and toasted coconut, mixing until evenly distributed.
  6. For a more color, add a few drops of yellow food coloring and mix well.
  7. Use the frosting to cover the Banana Delight Cake or any other desired cake.
